Lately I am focusing on creating tranquility and coziness at home, but I have also been on a major cleansing kick over the last few months because pregnancy really kicked my butt, and it took me a while to heal. I’m still not 100% healed. So I have been working with an online trainer, Irene Iron Fitness, to get my eating back on track and kick up my workout routine.

One of the things that has come out of this new postpartum project is that I have re-connected with cooking. It’s just healthier to make your own food, and also not as hard as you think and it is so incredibly rewarding. One of my favorite things to do on Sundays now is make my own almond milk – leche de almendras.

I have never been a huge milk drinker, especially because it’s really hard on my stomach, and I have never really loved the fact that there are so many extra ingredients in nut milks that you really can do without.

What about making your own nut milk? Si, y hay tantos benificios a la leche de almendras: Tienen hartas healthy fats, proteins, vitamin E, magnesium, they reduce blood pressure and help with hunger. Also the milk is creamy and delicious and won’t hurt your stomach if you suffer from dairy intolerance or milk allergy. You can use it on your te or cafe con un poquito de Stevia o Agave, use it on your granola or muesli, or make overnight oats.

Here’s my favorite easy almond milk recipe:

You will need:  Blender raw, unsalted almonds, your favorite healthy sweetener, cheese cloth or buy a nut milk strainer on Amazon,

  1. Compra raw, unsalted almonds from the market and add them to a large bowl
  2. Boil water, let it cool, then add to bowl, and cover almonds
  3. Leave almonds soaking overnight (if you are on a time pinch, use boiling water and leave there for 3-4 hours).
  4. The next morning, add the almonds to your blender, add your sweetener, fill the blender about 75% with drinking water and blend for about a minute
  5. Strain the goop using the cheesecloth or strainer into a bowl, which you will then add to a 32oz mason jar or any bottle you have lying around.
  6. Drink up!  it’s that easy.
